Black Bean Brownie Balls

easy recipes nutrition Aug 25, 2017

These should come with a warning label, LOL!!

Super yummy, high in protein, and fibre, and highly addictive !

The BALL

One and a half cups of black beans. (I soak mine, but you could use canned, just rinse VERY well!)
Two scoops of vegan chocolate protein powder. (Your fave will do!)
Three packets of powdered Stevia
3 tablespoons of cocoa
4 tablespoons of coconut oil
1/4 cup of water
1 teaspoon of vanilla
Mix in processor and form into balls… It will make 22 to 24

Bake in oven on parchment paper for 10 minutes at 350°F

They will be very soft

Put them in freezer for an hour or 2

Step 2:  The COATING

Melt 1/3 of a cup of coconut oil, and mix half a scoop of chocolate vegan protein powder into it.
Coat the black bean balls with mixture

Store in the fridge. Enjoy!!!

Nutritional macro data according to my fitness pal using above ingredients :

These freeze VERY well and are peanut free, so if you pop one or two frozen ones in your lunch bag (or someone else you love) it will be a delightful treat and thawed beautifully by lunch or snack time :)
