Easy Chocolate Mousse/Low Carb Treat

I’m a huge fan of both staying within my macronutrients and having delicious snacks!

This is suitable for a low carb lifestyle .131 Method approved also! The carbs may seem high, but they are low glycemic and very high fibre which makes a HUGE difference! If you don't want the nut butter, you can also add 70 % dark chocolate shavings. Experiment to your taste! 


The best way to start is by using chilled full fat coconut milk in a can. That’s how you will get a nice whip. The brands I like are Asian Family and A-Roy D because they don’t have added guar gum in them, and the cost is pretty decent. You should be able to find a good one at your local grocery store, but be sure to read the label.


1 serving

  1. Whip ⅓ chilled coconut milk for about 3 minutes (until soft peaks form)
  2. Add ½ scoop vegan chocolate protein powder
  3. Add 1 tbsp of psyllium husk powder (optional)
  4. Mix with beaters again.
  5. Spoon mixture into bowl and top with 1 tbsp of your favorite natural nut butter, and natural unsulphured coconut shavings.

Don’t be afraid of the caloric number. It seems high right? It’s the quality vs quantity!


Why not have this as part of a vegan dinner? Roast up some vegetables, and toss them on a fresh bed of greens with a little avocado, apple cider vinegar and himalayan salt, and you’ve just made a light satiating low carb dinner :)


Why psyllium fiber???

2 reasons..

1. If coconut milk is not quite thick enough it will double as a thickener. If you add it, you must eat it right away or you will come back to a glue instead of a mousse!! Be warned!, lol!


2.  I’ve added psyllium husk fiber to my already high fiber whole food diet and it really helps keep things moving along .., just a little touch I’ve incorporated in my life after gallbladder removal.
